TLDR : Answer Summary
The user, holding an Irish passport, inquires about the implications of having an affidavit from the Irish embassy that certifies their pension, which exceeds 65,000 baht monthly, on their immigration process in Thailand. They wonder if they can apply for their extension as soon as they receive the affidavit. Comments from other users confirm that using the affidavit should suffice for the extension but advise that some immigration offices may request additional documents, such as proof of bank statements or paperwork submitted for the affidavit. It is recommended to apply for the extension about one month before the current visa expires.

some ( not all of them) Immigrations have started to want to see that you transfer yourself some living expenses every month, so don't be surprised if you are asked to show your bankbook along with the legalized by your embassy pension affidavit. In this case it is however not needed that you send yourself the minimum of 65,000 THB every month - it can be less than that
You should be fine using the affidavit from your embassy but some immigration offices also want to see the paperwork you supplied to your embassy to obtain the affidavit so hang onto it
