Hi I'm wondering is it possible to apply for an education visa in Thailand after my STV ends?

Easy, all it takes is a plane ticket and few tests and a hotel stay 😉 I was stv left, visited my family for a few weeks and came back under 14 day sandbox... Now test and go.. Even Easy.

Somebody can correct me if I am wrong but pretty certain a STV cannot be converted to any other visa type in country.

 Yup. Cannot work on it and let's face it. Majority under 50 who want a long term visa would like to work here, remotely or whatever.

 Unless at a Uni etc I think Ed visa's for language schools you just get in country. Come in on Tourist or Exempt, sign up and convert.
