Will listing myself as 'unemployed' on a Thailand tourist visa application affect my chances of getting the visa?

Hi. I'm currently visiting family in the U. S. and returning to start a new job at a private school. Through many conversations, they seem to know only one process to get me my Non-B and work permit. They are having me return on a tourist visa and then go to Laos for the Non-B a few weeks later. My question is, on the visa application for a tourist visa it asks for my current employer. Will there be an issue if I list myself as "unemployed"? I am technically between contracts. I have the bank statements and flight out to submit to the Thai Consulate here so no issue there. Thank you!

TLDR : Answer Summary
The user is currently in the U.S. and plans to return to Thailand on a tourist visa before applying for a Non-B visa and work permit. They are concerned about listing themselves as 'unemployed' on the tourist visa application, as they are between jobs and have bank statements and a flight booked to submit to the Thai Consulate.
