For the 60 plus 30 single entry tourist E visa, where do i apply?, im British passport holder, but living in Italy, not resident of Italy. My UK bank statements etc all have my Italian address, only thing with my old UK address is my driving license. Do i apply in UK or Italy please??

I'd apply with the consulate in the UK, if most of your documents (especially passport and driving license) and even your flight are out of the UK.

Its an E visa, so its online.

it's online but you still have to choose the embassy you are applying through and the local staff of that embassy will process your request.

Sure. During this eVisa process, they will make you upload proof of residency in the UK ... just upload your UK driving license. That should make them think they are responsible for you. eVisa in Italy might go through as well (given the address in the bank statement). But I would guess UK is the safer bet in this case.

It is sort of an edge case. But what isn't with Thai immigration. Many of their requirements don't exactly ever meet the real lift situation of applicants. Good luck.

Im going back to the UK to fly out, i do have UK bank statements with my Italian address, but nothing else.

if you're flying out of the UK then you can probably get away with applying there since they'll want to see a flight from the UK to Thailand. I'm not sure if Italy will issue you a visa for a flight from the UK

i don't think they care where your money is, but I can't say that for sure. But it's not unusual for a European to have a bank account in another EU country is it?

my suggestion would be to try it and see what they want. People buy tourist visas all the time from countries other than that which they enter Thailand from.

You have to apply based on where you are physically.

So you'd fill an application for evisa and put that you're applying through Italy.
