We arrive Monday so I assume I cannot complete until 72 hours before hence Friday afternoon..... The arrival data I guess is 'greyed out' until within this period?

Answer summary
You can complete the TDAC online form only within 72 hours of your arrival in Thailand. For arrivals on Monday, the form can be filled out starting Friday afternoon (Thai time). Note that fields related to your arrival date will be greyed out until you're within the 72-hour period. Make sure to fill in only the mandatory fields marked with an asterisk (*), as other fields are not required.

And remember the 3 days is Thailand time. So if you're coming from the usa, it's really 2 days because you lose one.
