TLDR : Answer Summary
Responses to visa applications can vary widely depending on multiple factors, including the embassy where the application is processed. While some users report approvals received at late hours, such as after 7 pm UK time from the London Embassy, others indicate that if the application is pending document checks, responses are likely to come during office hours. Overall, applicants might expect responses generally within a duration of around 3 months, as suggested by one commenter.

I doubt it is officers taking their laptops home and doing work. More likely there is a lag in the system between when an officer approves and when it shows up in the system for the applicant to see.
