On the employment letter for remote worker, has anyone got approved without having Thailand specified and just a generic statement that role is fully remote and can work from any overseas location ?
Summary so far
The effectiveness of an employment letter for visa application as a remote worker is in question. Some users noted that approvals are difficult without a specific statement about working in Thailand, while others mentioned successful applications when their letters were addressed directly to the Royal Thai Embassy.

Mine included Thailand and was addressed to the local Royal Thai Embassy
I can't answer your specific question but I can say plenty have been rejected that didn't include a letter from their employer stating they were allowed to work remotely from Thailand and that they won't work with any Thai entities or clients inside Thailand
