TLDR : Answer Summary
A UK citizen married to a Thai national should apply for a Non-Immigrant visa. When selecting the purpose of visit, they should choose 'To stay with Thai Family residing in Thailand (more than 60 days)', which provides a 90-day single entry Non-O visa.
