TLDR : Answer Summary
A UK couple in their 50s, traveling to Phuket for four months, should consider applying for the Non Immigrant O visa, which allows a stay of 90 days upon entry. Alternatively, they can apply for the Non Immigrant O-A visa for a longer duration, permitting a stay of up to one year.

The Non Immigrant O visa based on minimum 50 years of age gives you 90 days of stay on entry. There isn't a visa which covers a 4 month period

You can apply for the Non Immigrant O-A visa which gives you 1 year of stay

Sadly, there are no ED visas being issued for Thai cooking classes at this time.

why O-A?? One year Immigrant O extension based on retirement requires less and does not currently require health insurance

My comments were directed to first comment suggesting a one year O-A extension. I think we all agree.

That may well be the case but then going for a one year extension requires it be the Non Imm O-A. That is the situation I would try to avoid if possible.

You don't need to get a one year extension of stay on the Non-OA visa. You can let the visa expire and get a new visa next time.

Mike Gholson. OA is the best option for four months. Everything is done via eVisa in the UK. No money transfer and insurance obtained in the UK can be used. Will not have to stuff around getting an extension in-country

True. I guess it depends on long term plans. But wouldn't Tourist Visa to 90 day Non Imm O inside Thialand take care of short term stay and if they decided to remain in Thailand then apply for One year Non O extension?

He is abroad, so how to get an extension of stay?
