TLDR : Answer Summary
UK citizens can apply for a 30-day extension of their stay in Thailand at the immigration office for a fee of 1900 baht. For the first extension, no documents from the embassy are required, although additional extensions may need embassy documentation due to specific travel circumstances.

Take her to the immigration office and apply for the 30 day extension for 1900baht. AGAIN as it is her first extension she will need NOTHING from the embassy to get it. That is ONLY for an extension AFTER the first one due to inability to travel because of covid
