Has the embassy ever requested additional documents using questions like these under the old rules? Or are these questions only used during the interview process?

Other request documents: Please upload proof of your payment for the training fee from your bank transaction history

Other request documents: Please write a motivation letter explaining why you want to learn Muay Thai

Other request documents: Please provide a letter explaining how you will support yourself financially during your Muay Thai training course

These questions are not unheard of and will probably become more common as they are working to make the approval process more rigorous. As for the translation, you have to use a translation service. A simple Google translation won't cut it.
