TLDR : Answer Summary
An Italian passport holder can apply for multiple Tourist Visas throughout the year, as there is no official limit on the number of Single or Multiple Entry Tourist Visas. Generally, a Tourist Visa is valid for 60 days, which can be extended for an additional 30 days. It is common for travelers to go through border crossings or use visa exemptions, but frequent back-to-back visas may lead to scrutiny by immigration officers. It is advised to have proof of funds, accommodation, and onward travel handy when entering Thailand, especially after multiple entries.

Official there is no limit on having Single or Multiple Entry Tourist Visa's. The only limit that exist is the 2 times Visa Exempt Entry, entry without a visa, by border check point for mentioned countries on this picture. There is also no official limit on Visa Exempt Entry using airports. Immigration Officer at check point can ask for: Proof of funds, 20.000 Thb or equivalent in cash, proof of accommodation and proof of onward travel. The more back to back tourist visa and/or Visa exempt entries you have, the more likely the chance get that you get these question when you enter Thailand.
I am not sure about Italian but I think it's mostly the same as US. The visa is 60 days and you can extend 30 days, effectively becoming a 90 day visa. How many you can do in a year is really unknown. I am on my 5th back-to-back which is more than a year's worth. Other people have had problems with fewer visa while others still have no problems with more back-to-back visas. My recommendation is not get a visa from the same consulate twice in a row, go to different consulate each time. Check with this group before going to determine which places are being easy and which places are being difficult.

Sounds good, but the final decision is with the Immigration Officer.
bahts on cash and proofs of accomodation will be everything ok no?

With multiple back to back tourist visa and visa exempt entries you're more likely be asked to show proof of funds, 20.000 Thb or equivalent in cash, proof of accommodation and onward travel. These are the only things Immigration Officers can ask on entrance.
Following the rules => have all your paperwork. No more than 2 land border bounces. Have a decent appearance while crossing (not a rule but good advice), avoid overstay (1 or 2 days not a big deal. I history of 1 or 2 day over stay, or overstay more than 1 or 2 days -- can be an issue). Basically, treat Thailand like a privilege/treat and not right. Be a good tourist.
the last question sorry.following the the rules what u mean

ooh -- keep in mind crossing the border via land and crossing via air are two different things with different rules. Crossing by land -- you are granted 2 year. By air you do as many as you like (or only 4 a year, I am not sure). Every time you cross a border land or air you are subjected to examination. The border guards look at you, your passport history and decided to let you in or not. Most times if you are following the rules - they will let you in. Sometimes they do not. For that reason I try to cross the border fewer times, and that is why I get the visa. It means I only have to cross the border every 90 days or 4 times a year. By doing the back-to-back via land or air - you will be subjected to examination - 6 times a year. Each time you run the risk of being denied entry. Although, if following the rules - it's less likely.
but i mean not get visa only just make another entrance and afterwards extend 1 month so totally 2 months

I usually stay longer than two days. But you have the right idea. I never use agencies. There is some benefit I suppose but I think the further out you go the less common they are. HCMC - Vietinam was a easy to get visa - no need for an Agency. Burma, HK, Korea, Manila -- all easy, no lines, no waiting, no need for agencies.
And just do a visa on arrival for example go to vietnam and come back in 2 days by plane would be ok,?

Better with agency or i can still doing for my own?

I believe you can do a land crossing, border-bounce twice a year. That means crossing the border and returning immediately for a 30 days visa exempt. which can be extended 30 days. If more than twice you'll need to get an actual visa.

You should have no problem getting another visa.

An SETV will get you 90 days in total..you are stamped in for 60 and then you extend at Immigration for another 30 days at the cost of Bt. 1,900....then you can apply at another embassy outside the country for another visa and repeat the process.

And in the embassy they dont put u on problems if every 3 months u do tourist visa?

You are advised to switch embassies every now and then so you do not get too many back-to-back visas from the same place. otherwise you will bet refused (Red Stamp) and cannot use that embassy again.
