TLDR : Answer Summary
If you are already in Thailand on a METV, you may be able to obtain a Non-Immigrant ED visa at your local immigration office, depending on the type of school you plan to attend and other circumstances. It's advisable to consult with the school regarding their ability to assist with obtaining the visa either locally or if you need to visit a Thai consulate outside of Thailand.

I don't think there are any private schools that will just let you enroll for 3 months who offer ED visa support who can also get the ED visa inside the country
And be aware if you have a history of staying in Thailand using various visas, exempt entries, border runs and extensions, the Thai Consulate you go to may deny to issue you an Ed Visa. And upon reentry arrival, Thai Immigration may ask why you stay so long in Thailand. Good Luck
Believe me the school you enroll in will know whether they can get you the 90 day ED visa inside the country OR give you paperwork to go to a thai consulate to get the 90 day ED visa.
Ask the school you're signing up for what they can do
You can get your Non Immigrant ED visa at your local Immigration office. But that all depends on what kind of school you are going to attend classes from, your length of stay and where you are in Thailand. The school is the best place to ask this,
no confusion, it is something you talk about with the school you like to visit and the course you want to follow. Do not look how other schools or universities prepare their lessons, nothing to do with your situation
