TLDR : Answer Summary
The question revolves around whether actual documents need to be sent to Canberra for a Thai visa application from Australia. Responses indicate that, for some visas like the O type spouse visa, you may need to send your passport, but other documents can often be submitted as copies. Personal experiences shared suggest that sending passports is common, while supporting documents might not need to be originals.

I did 2 visas via Sydney, all done by post, only send passport, everything else was copies
Twice I have pulled tourist visas from Australia (I am a US citizen). I used Brisbane and Melbourne, I did have to leave my passport with them but they were done in 1 day. I don't know if that helps you any.
