TLDR : Answer Summary
A German citizen currently in India seeks advice on applying for a Non-Immigrant Visa to stay in Ko Phangan for over three months at a Yoga Ashram. Comments suggest there is no Non-Immigrant Visa for more than three months unless you are over 50 years old, and recommend applying for a tourist visa instead, which can be extended after arrival.

OR apply for a single entry tourist visa BEFORE you come here, which will stamp you in for 60 days and that you can extend for 30 days once you're here.

Post on a f/b group related to Koh Phangan and see what advice you get from people there.

you apply for a non-immigrant type visa at a thai consulate in another country. get the documents from the place you're volunteering or studying, check the requirements at the thai consulate you're going to go apply at, meet the requirements and get the visa.
