TLDR : Answer Summary
You are not required to fly only with a Thai government-recommended airline, but you must book flights on carriers that are pre-authorized to operate into Thailand. Be cautious when booking separate tickets, as you may encounter issues with transit, especially if a connection involves entering another country. Combinations of authorized airlines, such as Etihad and Emirates, are mentioned as options departing from Manchester. Always verify the latest travel guidelines and airline information on your embassy's website before booking.

Some countries on fco list require you have 14 days quarantine on return to UK, other countries no quarantine such as Dubai, Singapore, Qatar etc
Remember that, if you do arrange your own tickets, there are potential pitfalls.
For example : you find an airline authorised to fly to Thailand (let's say Singapore airlines) so you book SIN-BKK with them. Then you book a flight to Singapore (let's say, British Airways). You'll not be able to travel. Why? Because they're separate tickets and you can't be through-checked. You'll not be allowed to enter Singapore (even to go straight to check in for your next flight).
Please ensure that ALL flights are on ONE booking.

Commercial air traffic is suspended into Thailand. Only flights that have been pre authorized can fly into Thailand.
You can book the flights directly with the airlines or from 3rd party booking agents, but they must be the flights/airlines/routes already pre-approved. There should be a list on your embassies website.
