Did anyone apply with low income (monthly 500-600€) in the last 3 months and double/triple amount of minimum bank balance, and got rejected with freelance contracts?

That's way too low to support yourself. Plus even if you 80K saved up, it'll still won't be enough to stretch it for 5 years unless you find a better paying job. BKK is still quite affordable but times have changed, baht fluctuating and prices slowly rising
