I’m a US citizen, my girlfriend is from China. Is she able to extend her visitors visa and if so how many times? We want to stay in Thailand for up to 6 months a year. I’ll just do a visa run. Can she do the same as a Chinese National?

They can and often do require people on VOA to show proof of funds, proof of onward travel in 15 days and proof of a hotel booking.
I'd say check with the thai consulate in China that serves the area where she lives.

Go for it...Good luck...the 6 month METV sounds like a good option if she can obtain it. Note its not 6 months at on entry...look at how you get 6 months out of it.
Also...explore an Education Visa for her...Thai language or University study. Just a thought. But she would have to study.
I think she will be able to do it. We’ll just leave and return together after the 90 days. I think this can work out. She “works” for her fathers company in China the 50,000 RMB is also doable.
Jeffrey Genser frankly unless she can meet the requirements of the METV ...for up to six month in Thailand...90 days at a time...its going to be difficult for her to stay beyond 15 days. The requirements stated for the METV are strict. Good luck.
