Is it possible for me to get a one way ticket to Thailand on a non- immigrant O visa through volunteering at a foundation? Or do you always have to buy two way tickets in order to get a Visa? I want to buy a one way ticket to Chiang Mai because I’m not sure of the exact date I’ll want to return back to the USA.

You can be asked to so proof of onward travel on ANY visa to the country when you stamp in. However you are highly unlikely to be asked when flying in on a 90 day Non-O visa.
Now if you're thinking of winging your way here BEFORE you have the visa MANY airlines will not let you check in to come here without a visa in your passport or proof of onward travel
I just checked the Thai Embassy website in Washington DC. they mention a ticket leaving Thailand. So you can buy a one way ticket and than a ticket to a neighbor country out of Thailand on about 90 days after arrival. Here is the link:
