I have previously had a Muay Thai ed visa and now have a soft power dtv with Muay Thai. That said I had no current visa when applying for dtv I would imagine this could cause difficulties

I am curious about this too, I think the school needs to be accredited for both. DTV is a tourist visa instead of education one. I've not heard of anyone trying this yet. I did 1y ED for Muay Thai but applied for DTV as digital nomad/workcation.

There have been reports of people getting DTV after language ED?

Yes, Muay Thai is one of the best options for the dtv. Fight EVO360 Thailand - Thepprasit Boxing Stadium is good if you need a gym with all the proper paperwork and licensing.
