Good Morning. My Husband and I have a 60 day METV. We will arrive in Phuket on November 17th. IF we leave Phuket before the 60 days expire ???Can we re-enter and get another stamp for 60 days? We are from America. Thanks.

not before the 60 days expires, no.. The visa is valid for 6 months from the date it's issued. You can enter/exit all you want during that time. Each entry gets you 60 days.
You don't have to return before anything expires except the 6 month VISA. you can stay out of the country as long as you want (you just burn the validity of the visa not being IN thailand is all).

The way a 6 month METV works is;
The visa is valid for 6 months from the date it's issued (not the date you enter thailand)
The visa is good for unlimited entry/exits during that time with each entry getting you stamped in for 60 days.
When the 60 days runs out, you either go to the immigration office and buy a 30 day extension for 1900baht OR you exit/re-enter the country and get stamped in on a NEW 60 day entry stamp <- you can do this as long as the VISA is valid for
If you applied for the visas online via the eVisa system make sure you print out the PDF file they email you <- that IS your visa. Present that and your passport when you stamp in to the country.
Also CHECK your entry stamp once they give the passport back to make sure you were stamped in as TR60 category and for 60 days
I think you’re assuming Todd that they applied for a multiple entry visa. I might be wrong but my 90 day non o visa is a single entry visa and it was only good for three months. The last one I got I chose to get a multiple entry visa and it was good for one year.

OP is talking about Tourist visa (single entry visa - SETV - validity is three months, multiple entry - METV - is 6 months, not 1 year. Entry stamp is always 60 days)
when you applied for your 6 month METV on line, did you only have to provide your out bound flight details from the UK and no other flight out of Thailand?
no. The onward flight was one of those €6 "rental" tickets from an onward journey website. Automatically cancelled by the website operator after 10 days.
it is a 6 month METV <- the M & E are the multi-entry part of the visa meaning you can go out and back all you want for the validity, just have the PDF printed off and present it with your passport when you stamp back in
