I don’t know if this question has been asked before. Can I arrange an AO visa in the UK and have insurance by a UK company, or do I have to pay Thai Insurance prices? Which seem at best very expensive

Theoretically you can use your own insurance, there is a form on the embassy website that your insurance company would have to fill out and sign. In practice no insurance company will do this, so you have to buy the insurance from their list of approve Thai insurance companies.
If you don't want to buy the insurance, then you can get a non-O visa instead and use the 800,000 Thai baht in a Thai bank account as security instead.
