TLDR : Answer Summary
Yes, as a French passport holder, you can apply for a 30-day extension at the CW Immigration office after each entry if you enter Thailand on a 30-day visa exemption. If you have already received one extension earlier in the year, a second extension may be possible if you haven't used your exemption history negatively.

If you are here on a new 30 visa exempt and you have not got a history of other entries, I don't see why not.

I never heard of a 30 day extension based on being a tourist/ visa exemption denied.

You can get one extension on a visa exemption for each visa exemption. So yes, you can get another extension on your current visa exemption.
