TLDR : Answer Summary
You can currently enter Thailand with a 60-day visa exemption and extend your stay by 30 days at a local immigration office for a fee of 1,900 baht. However, there are no options for a 60-day extension for visa-exempt entries. Additionally, it is advisable to consider getting the appropriate visa for longer stays, especially given the stricter immigration controls.
At this point in time it is still 60 days visa exempt on entry and you can extend that for another 30 days at your local immigration office for 1,900 baht. There is talk in regards to reverting back to 30 days visa exempt, but only talk at the moment. There is no 60 day extension available for visa exempt only 30 days.
well it seems you know exactly what the Government is thinking before they do, quick tip just wait for the official announcement before you actually start telling everyone what is going to happen.
There is a 60 day tourist visa available before you leave your home country. Then a 30 day extension at immigration for 1900 baht. Just count the days correct and book your flight accordingly. Day of arrival is day 1 day of departure is counted too
It sounds like a Non-O Retirement Visa (for over 50s) is the Visa that best suits your requirements as it will give you 90 days on entry (single entry)
then get a Thai tourist visa from the Thai Embassy in Sydney using the Evisa online application system. That gives you 60 days on arrival Plus the 30 day extension of stay at your local Thai Immigration office for 1900 Thai baht.

The second time you arrive into Thailand may be questioned by Thai Immigration Officers. They appear to be getting strict on allowing several times entry into Thailand using Visa Exempt Entry, tourist visa and extensions.
currently 60 days Visa Exempt. You may also extend for 30 days. If you have a medical reason your doctor can do an unfit to travel medical certificate and you can apply for a medical visa

At the moment, you would be stamped in for 60 days visa exempt, and you could apply for a 30 day extension.
