Is it possible to convert my 30-day tourist visa that has been extended 30 days to an Over 50 non-immigrant O visa? If so, what documents do I need to produce? I don't have plans to convert to a retirement visa. I just want to buy the extra 90 days.

Sorry Margarita its not possible at this time. Your only hope is that Indonesia reopens its borders to allow foreigners to enter so you can get your cat and return to the USA.
Or if Thailand reopens a land border which would allow you to do a border bounce to get 30 days + added 30 extension.
Most immigration offices that do the conversion from a 30 day visa exempt or a 30 day extension to a 90 day Non-O require you to have between 15 and 21 days left on your current stamp to apply because the application goes under consideration before you go back to get the Non-O and a new 90 day entry stamp inked in.
GO to your immigration office, see if they do the conversion and get the hand out they have that lists the requirements as far as documentation etc.
