Intending to come to Thailand in March.

With the Test and Go scheme. I have the option to stay with a friend. Would I be able to book just day 1 and day 5 with a hotel or do I need to book 5 days straight?

Would anyone be able to recommend covid insurance that covers asymptomatic cases?

You can book just day 1 and day 5. Many hotels are now offering this package as well.

Some are even offering to pick you up or drop you off after your day 5 test as an enticement to get you to book both with them.

You can even book different hotels if you want, but that makes your Thailand Pass a bit more complicated.
