Can a US citizen perform visa runs in Thailand every 60 days with a 30-day extension, or is a Multi Entry Visa necessary?

I am a US citizen. Can I just fly out every 60 days (with a 30 day extension) and fly back for my visa run? I just assumed I could do that but now I am hearing there are restrictions to visa runs.

Or do I need a Multi Entry Visa (how long are those for) from my home country.

I am also looking into an Educational Visa to learn Thai.
