I am thinking of visiting Laos for a few days, then re-entering Thailand.

 Can anyone please tell me if such a plan would  require me to to re-start Test & Go, spending another night in an approved hotel, etc, on re-entry into Thailand?

Laos is closed. No visas to enter. Who is advising you otherwise? In fact, the Thai embassy in laos may not be issuing visas.. Not sure about that

the only way to get back in is Thai pass. If you leave for a minute it’s the same process all over again. But you can apply and get approved before you even leave.
