The timeline for obtaining a Multiple Entry Tourist Visa (METV) from the US varies, but recent experiences indicate it can take under 30 days if all information is provided correctly. However, due to impending Thai holidays on June 1st and 3rd, processing may be tight. It's suggested that if you're traveling on June 5th and need the METV for multiple entries in the next six months, applying now is wise. Notably, applicants recommend the DC consulate for quicker processing times, with some receiving their METV within a week.

I recently applied last month to the DC one and received my METV within a week.
Usually under 30 days if you give them all the info. Don't use NYC consulate or you'll wait a LONG TIME. DC is the quickest and you DO NOT need to "use the consulate, embassy that serves your are". I've used 4 different ones NO PROBLEMS.
June 1st and 3rd are both Thai holidays. That only leaves 7-8 business days between now and when you leave. It'll be tight but it might still be 60 day visa exempt exempt when you arrive.
If you actually need an METV because you're planning on entering Thailand multiple times over the next 6 months, then you might as well apply. They might issue it after you already arrive in Thailand but you can just use it on one of your later entries.
