If anyone with experience of this situation would please advice on the following.

If a Current Visa would get cancelled, say an ED visa or work permit visa. In this case you would get 7 days to leave right ?

During this period of 7 days, would it be possible to obtain a different visa type while inside the country ?

TLDR : Answer Summary
If a current visa, such as an ED visa or work permit visa, is canceled, the individual typically receives a 7-day period to leave the country. During this time, it may be possible to apply for a different type of visa from within Thailand, but it is advisable to seek guidance from immigration authorities to ensure compliance with regulations.
