TLDR : Answer Summary
For a pensioner holding a retirement visa in Thailand who wishes to offset their pension against the 800,000 THB bank account requirement, it is important to prepare the necessary documentation. You typically need to provide proof of income via an income affidavit from your embassy or consulate, as well as bank statements showing the necessary funds. If using a combination method, ensure that your banked money has been seasoned for the requisite amount of time. Clarifying any nationality-related documentation will also be essential, especially if you're dealing with multiple countries' consulates.

One last tip, while it isn't specifically spelled out, when using the "combination method" for proof of funds, more and more immigration offices are requiring the banked portion of the money to be seasoned the requisite amount of time.
for your first yearly extension of stay based on being over 50 (retirement) banked money needs to be seasoned for 60 days and for every subsequent extension of stay the money needs to be seasoned for 3 months.
So for using the combination method you'd have to have what every money you are using in the account for that amount of time.

Umm, even if you could get one, the thai immigration office wouldn't accept a stat dec from the auzzie consulate because you're using a New Zealand passport to get your extension. ;)
I'd take the copies of the deposits to show the amount on the stat dec is actually backed up by something with you when you're applying for your extension but I wouldn't give it to them unless they asked for it.

Jamie Rhodes, you would go to the New Zealand consulate in the All Seasons Place on Wireless Road here in Bangkok they're open from 8:30- 12 and 13-14:30 M-F.
Just take your passport, you fill out the statutory declaration (you're not required to show them proof of the amount you're putting on the stat dec), they notarize it and you pay 1330 baht.

Then you couldn't go to the australian consulate and fill out a stat dec to get proof of your pension :/ You'd have to get it from the new zealand consulate

how about stating what country your passport is issued from? That way people can give you better advice about how your consulate handles that here in this country....

It's called verification of income.

There are 3 options to apply for the Extension of Stay based on being over 50 years of age. 1) 800.000 Thb in own bank account for 3 months seasoned at day of application, 2) Income affidavit from Embassy with minimum income of 65.000 Thb a month, or 3) a combination of 1 and 2 not less then 800.000 Thb combined.
