What will I need to apply for a tourist visa off the back of a cancelled working visa?

You can not apply for or get a Tourist visa inside Thailand. I have no idea what you mean with a working visa as such thing does not exist in Thailand.
You must have a Working Permit from the Ministry of Labor and a Visa or Extension of Stay that allows working in combination with that working permit. Two different things.

Il be cancelling my working permit along with my extension of stay based on working and will be looking to change to a tourist.

Okay so what extension of stay would be appropriate.
doesn't matter, ask for a covid one, what ever you ask for will be denied and IF they try to send you away tell them you want the 7 day get out of thailand stamp (application for extension not approve) that gives you a week to get out

I only need 3 days so as far as I'm aware j apply for a tourist extension and theyl refuse and give me 7 days to leave
Okay, you can apply for a new Extension of Stay based on what ever reason, if you do not meet the requirements, your application will be NOT approved and get 7 days to pack your bags and leave the country.
That is not a tourist extension, but it will give you some time.
