I am looking for 6-12 months courses which would allow me getting education visa in Thailand. I am interested in:
1. Yoga. I don’t want to become a teacher, I just want to practice.
I would love to participate in some course which lasts 6 months at least.
2. Meditation. I would like to practice or learn to become a teacher.
I would love to participate in some course which lasts 6 months at least.
(I don’t want to be in a monastery for that long, so I am not considering Vipassana).
I don’t find anything other than 1 month yoga course and vipassana meditation. If you know such courses, let me know please.

You won't get an education visa for yoga or meditation. You can get an education visa for learning Thai and do the yoga and meditation on your weekends or school holidays. You used to be able to get long-term stay meditation visas for Burma but not sure how things are at the moment as obviously it's problematic. If you want to do long term yoga and meditation courses your best bet is for India which gives out 6 months visas for most nationalities
Fairly certain neither of those would qualify you for a visa. That's why you can only find a 1 month class, because you can do that on visa exempt or tourist visa.
