As I need to prepare ahead, what are the best options for flights out of Bangkok for the 180 days in/out strategy? Kuala Lumpur? Ho chi Minh?

Depends where you are but your options are not just flying you can leave and return at any border crossing, plane bus train boat walk again look at where you are located at the time and how long you want to stay out for. I would just go out and come back to get the stamp but if you really want to visit somewhere plan its your choice to make

Depends on your passport. For example as a Brit I get 45 days visa exempt to Vietnam. Bangkok to Danang flight for a few days there and Hoi An would be my personal choice. However, if visas required then others choices are available.

Visa requirements vary depending on your nationality, but reality is, where do you want to go? If you have to fly somewhere, make it into a short/long holiday. For me, one of the few countries I have not been to in Southeast Asia is Malaysia, so if I had to exit, it would be there
