TLDR : Answer Summary
When applying for a Non-OA visa, it's important to choose medical insurance accepted by the Thai embassy. Some suggested insurance companies include AXA, AIA, and Falcon Insurance. Many commenters also emphasize the importance of working with reputable brokers like Tenzing Pacific Services for guidance. It's noted that the insurance must be from Thai providers, and be sure to check if the embassy requires any specific documentation from the insurance provider.

Speak with Tenzing, they're a very helpful expat health insurance broker based in Thailand:

AIA is who I used to… the rep you get is very important …. The insurance system is different here …. Your rep stays with you, you just don’t buy a policy and carry a card around with you!

If you're applying for a Non-OA in your home country there is a lust of specific insurers they will accept. You don't have choice other than those.
