Hello! I am also French and I will apply in Vietnam too. Do you know if I have to translate all the documents into English since I only have the documents in French? And if I have to go through an approved translator?

oui ils savent les lire car les formats sont partout les mêmes. J’ai pas eu besoin de traduire moi en tout cas. Mais tous les docs qui contiennent des phrases faut traduire. Même mon Kbis je l’ai traduit

From what i understood, all the documents have to be either in English or in Thaï. So we have to translate everything. For the approved translator i'm not too sure, what i know is that it doesn't have to be notarized

J’ai mis mon adresse temporaire en Indonésie vu que j’ai postulé depuis Jakarta. Mais moi c’était sur un papier car c’était une ambasse en physique (walk in embassy)

As per the rules DTV should be applied at the embassy in the country you are living in.

So in this case it should be the Vietnam address since you are applying at the Vietnam embassy.
