Hi. I applied to DTV visa with my UK company (i am the only owner). I submitted personal bank account statement from another country. I am in Laos Vientiane now.

They asked me to submit some extra documents: my employment contract and my portfolio.

What dociments exactly shall I bring?

1. Shall I sign an employment contract with a company that I am working with for long time like a client or just show my UK company again (I had submitted Certificate of incorporation and MoA but they needed the extra documents) or sign an employment contract as uk company owner with myself as working for my own uk company?

2. What portfolio do I need to submit?

Definitely prepare a contract with yourself instead of gumming up the works with other companies. If you had taken the time to read the voluminous posts in this group you would see that all the self-employed people are asked the same.

I think a letter from your company to yourself give you permission to work remotely from Thailand. As to the portfolio I'd show invoices for work you've done and your business bank account showing the money being received, if you have photos of the work you carried out include them referencing the invoices
