Hi , for Muay Thai the gym should have certificate from Sport Authority of Thailand will can accept for DTV easy.

By the way I have gym but still waiting the certificate but for ED visa 1 year I can advise you.

No, there is no list. It would be impossible because some activities are accepted by some embassies while not accepted by other embassies.
