My employer in the USA has provided a notarized statement verifying I’m remotely employed, salary, etc. The attached document here (line 😎 says that I also need to get them to have that statement authenticated by the Thai embassy in America. Is that necessary or does the notary cover it do you think? Same question with their business license (line 9)… thanks in advance!

That does not look like a requirement list for America Thai embassy. It even states funds in MYR. You won't need any authentication, just legit documents from whatever company registration site or licensing authority in the state. Are you applying in Myanmar?
