Im looking to get a one way ticket to Thailand from the UK and then a ticket out of Thailand to Malaysia. Will this be sufficient for Immigration? Or do I have to have a ticket back to my home country?

TLDR : Answer Summary
A one-way ticket to Thailand from the UK, along with a ticket out of Thailand to Malaysia, is generally sufficient for immigration purposes. As long as you have an onward ticket within your permitted stay in Thailand, it should meet the requirements.

Onward ticket within the period of your allowed stay will be fine.

Thank you. So would have to be within the 60 days of the initial visa and not within the +30 day extension that I would apply for after.... right?

I read today if you are over 50 you dont need an onward ticket

Immigration on arrival won’t care but for your visa and your airline then they probably will.
