TLDR : Answer Summary
The timing for applying for a 30-day extension to a 60-day visa exemption in Thailand varies by location. Most immigration offices allow applications when there are 30 days or fewer remaining on your current visa stamp. Some larger offices, such as those in Bangkok, Phuket, and Chiang Mai, permit requests when you have 45 days or fewer left, while others, like in Koh Samui and Pattaya, require that you have only 7 days or less remaining. As for timings, the discussions indicate that it's quite early for anyone to have tried this since the 60-day visa exemption has only been recently introduced, making it unlikely that anyone has done so yet.

Following- this is also what I plan to do! Do you have a return flight on the 60th date or on the 90th?

A onward ticket is always related the current visa-period (60 days) since Immigration doesn’t know your intentions to extend.
If you extend the 60 days only a few days into the the 60 days, the Immigration can argue, you traveled into Thailand under false intentions, and that you should have gotten a 90 days visa instead.
If you're referring to the 60 day Visa Exempt entry and asking if anyone has tried to get a 30 day extension on top of the 60 days, then I think you're asking too early. It's only 9 days since the 60 day Visa Exempt was introduced, so it's highly unlikely anyone would try getting an extension yet.

How soon depends on where you are. At most immigration offices you can request an extension when you have 30 days or less left on your stamp.
At a few larger offices you can request when you have 45 days or less left (like Bangkok, Phuket, Chiang Mai)
At a few you can only request when you have 7 days or less left (Samui, Koh Phangan, Jomtien/Pattaya)
