Just incase it helps anyone with similar travel plans. 

I was approved today for my 60 day TR Visa via the Ho Chi Minh Embassy using my bus tickets from Malaysia to Thailand and back again as my transport in and out. No questions asked.

Eric de Leseleuc I didn't. I'm in Hoi An which comes under Ho Chi Minh Embassy. Just applied online. They needed some secondary stuff like a selfie showing I was in Vietnam, I just took one in front of a street sign and an itinerary stating my reason for a 60 day visa. No other hotel bookings, just my first week.

Applied on Monday, was asked for the extra stuff on Wednesday and it was agreed yesterday. So only took 4 days from applying to being approved.

Eric de Leseleuc yeah I was really impressed with them. Just a quick tip. They also asked for me to re-submit my financial evidence. My first submission was 3 months statements covering June - end of August. All I did was generate a new one in my banking app up to the same date I re-submitted the PDF's. That obviously seemed to be what they wanted as it went through no problem.
