Question: If I wished to apply for a retirement visa, would a copy of my latest tax return(s) satisfy ?

Nope, your tax return will NOT satisfy the financial criteria needed to get a "retirement visa" at a thai consulate in another country or at the thai immigration office inside the country.

So if I took copies of statements from HMRC website showing my income, tax due, tax paid to the British Embassy they would not issue necessary letter to satisfy Thai immigration?

Our tax returns were rejected as they wanted to see bank statements of actual income.

It all depends on where you like to apply for the Non Immigrant O Visa based on being over 50 years of age. If you like to do it inside Thailand is does not satisfy.
