Do I need to mail my passport to an embassy for a Thai visa, or do I receive the stamp upon landing in Bangkok?

There's no such thing as Thai visas in passports anymore. All Thai visas through an embassy or consulate are done online, and your visa will be a pdf document that is emailed to you. The only thing you'll receive when you arrive in Thailand is an entry stamp, not a visa, as you already have the visa that you received in your email.
