Should I plan to bring proof of funds and onward ticket for a 30 day extension at CNX? Or are those usually only asked for when entering Thailand? How about a letter from my employer in America? Thank you

you will NOT need any of that to get a 30 day extension at the immigration office. 1900baht, the requisite copies of your passport, a filled out form and you should be good to go
