I am on a non O visa which I just renewed. I donβt have a multi entry stamp and we are trying to plan a trip to Lao. Can I get a re-entry stamp driving across at Nong Khai or do I need to get it in Khon Kaen immigration where I do my visa stuff? Can I get it based on a date we are planning or do I have to go the day we are leaving?

They don't sell re-entry permits at the border crossing
you used to (pre-covid) be able to buy one a few km before the border at a small building but I don't know if it is still open π
Rather than risk you losing the extension because you can't get one I'd go back to the office where you got the extension and buy the re-entry permit there.
You can just make up dates you're traveling they don't care at all,
