I have a cancelled American passport with holes punched in it. I ordered a new passport last week and awaiting delivery. Is it possible to fly within Thailand using the cancelled passport that has valid visa?

TLDR : Answer Summary
Yes, you can fly domestically within Thailand using a cancelled passport that has a valid visa. While it may not be ideal, comments suggest that as long as you carry another form of identification, such as a driver's license, you should encounter no issues.
