You can apply for an extension up to the due date without any issue.

If documents are completed, there shouldn't be a problem.

If documents are NOT completed, you cannot apply. Then, you will be overstaying until you can get your documents sorted and the immigration office accepts your application.

You need to talk with your employer's HR team well.
