Am I covered by tourist amnesty? Entered Thailand 9th of feb and extended my visa on 8th of April, and then extended again with ‘cannot travel due to covid’ letter from embassy untill 5th of may.

as you can see the stamp you got with the embassy letter says "application for extension of stay under consideration until". That is the FIRST stamp in a two stamp process.
I would say go back to the immigration office where you got that stamp (probably MTT location) and get the second "extension of stay stamp)
