TLDR : Answer Summary
The acceptance of Muay Thai courses for education and DTV visas in Thailand depends on specific compliance with various government agencies. Key agencies include the Sports Authority of Thailand, the Board of Boxing Sport, and the Ministry of Education. It is advised to choose gyms with multiple certifications and a proven track record for visa application success. Some recognized schools include Muay Thai Fever and Chiangmai Muay Thai Gym, which have obtained the necessary accreditations and support for student visas.
for education visa they had to be accredited. wouldn't be surprised if same case for DTV

Most gyms have compliance to either or all of the following government agency's
1.sports authority of Thailand
2. Board of Boxing sport
3. Ministry of Education
Most embassy accept one of the above but sometimes they ask for a particular one, sometimes they want all 3 , sometimes they ask for business documents ( gym should be a Ltd company)
Like most things embassy related there is no set criteria.
Just try to find a gym with as much compliance certification as possible
You'll need to talk to the training camps and have them show you that they have a track record of successful paperwork and certification for approval. You also likely need a course schedule of 6 months at least.
